They say that high up in the mountains of Manizales, there’s a farm where coffee beans wake up to stories, and visitors to smiles.

I’m Tío Conejo, and I live there.

I’m not usually one to brag (well, maybe just a little), but today I want to tell you why you should come visit these coffee lands. Not because I say so… but because things happen here that don’t happen anywhere else in the world.

At my house —La Conejera— you wake up to birdsong and the whisper of trees. And if you rise early, like I do, you’ll see the sun gently peeking through the branches to warm the ripening cherries. No stage. No ticket. Just a hot cup and a view you won’t forget.

Many think coffee is harvested like mangoes. Oh, sobrino… if only you knew.

Here, you’ll learn to see with a picker’s eye — to spot the perfect cherry, to understand how water, time, and love turn a fruit into liquid magic.

I’ll show you how we pulp the coffee —with steady hands and a keen eye— and walk you through the differences between washed, honey, and natural processes. You’ll see how a single bean can change its soul depending on the path we choose for it.

We’ll also explore how we dry our coffee: sometimes under full sun, to give it boldness, and sometimes slowly in the shade, like pressing flowers you want to preserve forever.

And if you’re lucky, I might even let you roast a small batch with me, as we share stories and listen for the first crack.

Gesha with notes of candied pineapple? Sudan Rume with a whisper of mint?

Of course. We don’t just grow coffee here — we turn it into drinkable poetry.

Among the nine varieties we cultivate on the farm, we select the most exceptional lots to share with our visitors. Each one has a unique character, a secret, a surprise. And you won’t just taste them — I’ll teach you how to listen to them.

This isn’t a theme park dressed up like a farm. The people who welcome you here are the same ones who plant, pick, wash, roast, and pack the coffee.

And when you sit down to lunch with us —between spoonfuls of beans and Sofi’s laughter— you’ll understand that coffee isn’t just something you drink… it’s something you share.

Just watch out for Mario the Magician — he always appears quietly and somehow, without you noticing, you’re already holding your second cup.

5. Because when night falls, the story is just beginning

Many visit during the day… but the true sobrinos stay.

When the sun sets behind the coffee trees and the air cools into silence, the farm shows another side of itself. It’s the hour of fireflies, of canelazo, of firelight, and stories told slowly.

We’ve restored traditional coffee-growing architecture —with tile roofs, adobe walls, wide corridors, and cozy beds— so that visitors don’t just see coffee culture… they live it.

Spending the night here means waking up to the scent of freshly ground coffee, walking barefoot on warm wooden floors, and knowing that what you’re feeling can’t be bought.
